Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup chopped pistachios
- 1/2 cup chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp pistachio extract optional
- Green food coloring optional
- Pistachio nuts for garnish optional
Instructions:
Preheat your oven to 350F 175C
Line a muffin tin with cupcake liners
In a mixing bowl, combine the flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt
In another bowl, whisk together the melted butter, eggs, and vanilla extract until well combined
Add the wet ingredients to the dry ingredients and mix until just combined
Stir in the buttermilk until the batter is smooth
Fold in the chopped pistachios and chocolate chips
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean
While the cupcakes are baking, prepare the pistachio cream frosting
In a mixing bowl, whip the heavy cream until it begins to thicken
Add the powdered sugar and pistachio extract if using, and continue whipping until stiff peaks form
Add green food coloring if you desire a more vibrant green color
Once the cupcakes are done, allow them to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely
Once the cupcakes are completely cool, pipe the pistachio cream frosting onto each cupcake using a piping bag and tip of your choice
Garnish each cupcake with a pistachio nut if desired
